Cut for even simmering

Half-inch carrot pieces cook more predictably than a mix of thick rounds and thin shavings. If the carrots are wide, halve or quarter them lengthwise before slicing. The exact shape is less important than similar thickness.

Use the tenderness test in the instructions before blending. Firm pieces can leave the soup grainy even after a long blend. Add a splash of water if evaporation exposes the carrots before they soften.

Handle ginger before heating the pot

Grate the ginger finely so its fibers do not remain as large threads in the finished soup. Measure after grating. A tablespoon of thin slices does not distribute the same way, and a large unmeasured knob can overwhelm the carrots.

Garlic and ginger go in after the onion softens. Their small pieces can scorch while a raw onion is still cooking, adding a bitter flavor that blending will not remove.

Choose a safe blending method

An immersion blender lets you work in the saucepan, but the blade should stay below the liquid to reduce splashing. Switch it off before lifting it out. Move the pot to a stable, heat-safe surface and keep the cord away from the burner.

For a countertop blender, its instructions take priority. Some personal blenders are not designed for hot liquids at all. Cooling the soup and reheating it afterward is preferable to forcing a hot batch into an unsuitable container.

Adjust thickness after blending

The broth quantity is a starting ratio. Carrot size, pan width, and evaporation affect the result, so blend first and then loosen gradually. Adding a large amount of liquid early can leave you with a thin soup and fully cooked carrots that cannot absorb it again.

Serving and storage

Keep the yogurt separate if saving portions. Refrigerate soup in shallow containers within 2 hours, or 1 hour above 90°F, at 40°F or colder. Use within 3–4 days and reheat to 165°F. Add fresh yogurt only when serving. The yogurt contains milk; check broth labels for other allergens.
