Start with a pan that seals well
A heavy saucepan with a close-fitting lid holds a gentle simmer more evenly than a thin skillet. Choose one large enough to stir the mushrooms before adding the rice. A very wide pan loses liquid faster, while a loose lid releases the steam the grains need.
Rinse the rice in a fine-mesh strainer and let it drain while the mushrooms cook. Excess rinse water changes the liquid balance. This method is written for ordinary long-grain white rice, not instant rice or an unopened microwave pouch.
Let mushroom moisture cook away
At first, mushrooms may release enough liquid to look wet rather than brown. Keep cooking until that moisture mostly evaporates. Stir occasionally rather than constantly, giving the surfaces contact with the hot pan. If your saucepan is small, brown the mushrooms in two batches and return them before adding the onion.

Resist lifting the lid
Once the rice is simmering, frequent peeks let steam escape. Begin checking near the lower end of the package's cooking range. If the grains are still hard, consider both moisture and heat: extra dry cooking can scorch the base without softening the centers.
The five-minute rest is part of the method. It gives moisture time to distribute before you fluff the rice, reducing the urge to stir sticky hot grains aggressively.
Finish with spinach and lemon
Wash and dry the spinach unless its package says it is ready to eat. Add it in handfuls so it is easier to fold through the rice. Lemon juice is added last, when you can judge the seasoning of the whole pot.
Cool leftovers promptly
For a conservative make-ahead approach, divide leftover rice into shallow containers, refrigerate within 1 hour, and use within 24 hours. Keep at 40°F or colder. Reheat only the portion you need to 165°F, adding a spoonful of water to prevent drying. Do not leave the pan sitting out to cool slowly; reheating cannot make improperly stored rice safe.
