Leave room on the sheet pan

Cauliflower releases moisture as it cooks. When pieces are packed together, that moisture lingers around the food instead of evaporating. Spread the florets and chickpeas in one layer, with room to turn them. Two pans are more useful than extra oil when space is the problem.

Cut thick stems smaller than the florets so they soften in a similar time. Dry the chickpeas after rinsing; a wet surface makes the oil and spices harder to distribute.

Coat without burying the vegetables

Toss the oil and spices through the cauliflower and chickpeas before spreading them out. Seasoning only the top of a crowded pan leaves some pieces bland. Turn the mixture halfway through roasting to expose different surfaces to the metal.

Smoked paprika adds a smoky note without a separate sauce. It does not promise heat: paprika products vary, so check the label if you are avoiding hot peppers.

Make a sauce that will drizzle

Regular plain yogurt is easier to drizzle than very thick Greek yogurt. If your yogurt is firm, loosen it with a teaspoon of water after mixing in the lime juice. Add the listed salt gradually if your household prefers a milder seasoning.

The sauce contains milk. A nondairy alternative may work, but its flavor, thickness, and ingredient list will differ; check labels before offering the recipe to someone with an allergy.

Warm tortillas close to serving

Cold corn tortillas can split when folded. Follow their package's warming directions and keep the warmed stack covered briefly while you fill them. Do not overfill: serve extra vegetables alongside rather than stretching a small tortilla until it tears.

Store components separately

Refrigerate the roasted mixture, cabbage, and yogurt sauce in separate covered containers within 2 hours, or 1 hour above 90°F. Keep at 40°F or colder and use within 3 days for this recipe. Reheat the cooked filling to 165°F, then assemble with cold cabbage and sauce. Already-filled tacos soften during storage and are less convenient to reheat evenly.
