This version uses canned chickpeas and a simple lemon-cumin dressing. It can be served on its own, spooned into a wrap, or used as a side dish alongside a warm meal.
Drain the chickpeas well
Tip the chickpeas into a sieve, rinse them, and let the excess water drain away. Water clinging to the chickpeas dilutes the dressing and collects in the bottom of the bowl. There is no need to remove every skin, but you can discard loose skins that separate during rinsing.
If using chickpeas cooked from dry, use fully cooked, tender chickpeas and allow them to cool before assembling the salad. Firm or undercooked chickpeas remain noticeably chalky in a cold dish, where there is no further cooking step to soften them.
Cut vegetables for a balanced spoonful
Dice the cucumber into pieces that sit comfortably alongside a chickpea. Halve small tomatoes and quarter larger ones. Uniform pieces help distribute the dressing and avoid a bowl where each bite is mostly one ingredient.
Chop the red onion finely so it contributes flavor without taking over. If you find raw onion too strong, rinse the chopped pieces briefly in cold water, drain well, and dry them before adding them. Start with a smaller amount if you are unsure; you can always add more after tasting.

Mix the dressing separately
Whisk the olive oil, lemon juice, cumin, salt, and pepper in a small bowl. Combining them first is more reliable than pouring each ingredient over a different corner of the salad. Taste a chickpea with a little dressing rather than tasting the dressing alone: the ingredients soften its intensity.
Use herbs as an ingredient, not only decoration
Chopped parsley runs through the salad and adds fresh flavor to the chickpeas. Wash it, dry it well, and chop the leaves and tender stems. Large wet clumps do not distribute evenly, while very fine herb dust can cling to the bowl instead of the ingredients.
Let the salad settle, then taste again
The salad can be served immediately, but a short chill gives the dressing time to coat the ingredients more evenly. Toss again before serving because liquid will naturally settle at the bottom. A slotted spoon can help when filling wraps or pita bread.
Make-ahead and storage notes
For advance preparation, keep the chopped vegetables, drained chickpeas, herbs, and dressing in separate covered containers in the refrigerator. Combine them nearer to serving time when a crisp texture matters. Refrigerate the finished salad promptly and use within two days for this recipe.
Ways to serve it
Spoon the salad over leafy greens, tuck it into flatbread, or serve it beside the lemon chicken and potatoes. If serving it as part of a larger spread, keep the dressing restrained so it complements the other dishes. A good chickpea salad should feel fresh and distinct, rather than tasting like an extra bowl of sauce.
