Use whole cranberries
Fresh and frozen whole berries work for this style of sauce. Dried cranberries are a different product and will not behave the same way. Sort fresh berries before rinsing, discarding any that are damaged or unusually soft.
Frozen berries may lower the temperature of the syrup when added. Let the pan return to a gentle simmer, then check the berries themselves. The cooking range is a guide, and a larger or smaller saucepan changes how quickly liquid evaporates.
Measure juice and zest separately
Measure the orange juice instead of relying on the yield of one orange. Too much liquid can produce a thinner sauce. Wash the orange before grating, and remove only the colored outer peel; scraping deeply into the white pith introduces bitterness.
The zest is stirred in after cooking so it does not need to simmer for the entire time. The juice belongs in the saucepan at the start. These are two different additions, even though they come from the same fruit.

Judge thickness after cooling
Hot cranberry sauce can look looser than expected. Give it time to cool before deciding that it needs more cooking. Reducing it aggressively while hot can leave a stiff, sticky mixture once chilled.
Some berries may remain whole after others burst. Crush a few against the side with a long spoon if you want a more even texture. Avoid leaning over the saucepan: popping berries and hot syrup can splatter.
Reducing the sugar can change both tartness and set. If you adjust it later, treat that as a separate untested variation rather than expecting the same consistency from these quantities.
Keep this sauce refrigerated
Transfer the sauce into a shallow heatproof container rather than leaving a deep pot on the counter until completely cold. Refrigerate within 2 hours and keep at 40°F or colder. For this draft, use within 3 days and take out only the amount you plan to serve.
The fruit's acidity does not make an improvised jar shelf-stable. Do not water-bath can this version or store sealed jars at room temperature. Use a specifically tested preservation recipe if canning is your goal.
