Choose apples that hold their shape
Firm apples such as Granny Smith or Honeycrisp are useful starting choices. Softer varieties can collapse sooner, so watch their texture and begin checking early. The method does not promise identical cooking times across every variety.
Keep wedges about the same thickness and remove the cores fully. You can leave clean skins on for texture or peel the apples if preferred. Cut just before cooking to limit browning without introducing another ingredient.
Use moisture before reducing
The covered stage gives the wedges time to soften with gentle steam. Listen for a steady simmer rather than an aggressive dry sizzle. A spoonful of water is easier to adjust than a large splash that leaves the fruit swimming.
Once the apples are tender, uncover to let excess moisture evaporate. Stir gently with a broad spatula. Repeated vigorous stirring breaks soft edges, especially if the apples were cut thinly.

Finish gently
Maple syrup and cinnamon can stick as the pan dries. Lower the heat if a dark patch forms and stop cooking before the syrup smokes. The target is tender fruit with a light coating, not a hard caramel shell.
Let the apples stand briefly before placing them on cold yogurt. This reduces how much the yogurt warms on contact. Scatter the walnuts last for contrast, and avoid calling the recipe nut-free even if you leave them off your own portion.
Store the components separately
Refrigerate cooked apples in a shallow covered container within 2 hours, or within 1 hour above 90°F. Keep at 40°F or colder and use within 3 days. Reheat apples to 165°F, then cool briefly before adding fresh cold yogurt. Follow the yogurt label's storage instructions and keep walnuts separate so they do not soften in the fruit juices.
