Cook the beans before assembling
Trim away stem ends and cut very long beans so they are easy to serve. Boiling them first lets you check their texture before they are covered in sauce. Taste a cooled piece: it should be tender enough to enjoy, while still holding its shape.
Drain the beans thoroughly. Water carried into the baking dish can thin the sauce and make the breadcrumb topping damp. Frozen beans need their package cooking instructions and careful draining; canned beans have a different texture and are not an identical replacement.
Let mushroom moisture evaporate
The flour needs a short stir in the buttery vegetables before the milk goes in. Add the liquids in stages while whisking so you can break up small lumps early. Keep the sauce at a gentle simmer and scrape the bottom of the pan regularly.

Match the topping to the method
This version uses panko mixed with melted butter and thyme. Spread it across the casserole in a thin layer so steam can escape. It is a breadcrumb topping, not a claim to reproduce the flavor or texture of fried onions.
Use the specified shallow 2-quart dish where possible. A very deep dish can leave the center cooler after the top has browned. Check the center with a food thermometer, and shield the crumbs if they are ready before the filling reaches 165°F.
Serve and refrigerate promptly
Rest briefly to make scooping easier, then serve with a clean spoon. For leftovers, divide into shallow containers and refrigerate within 2 hours, or 1 hour when the room is above 90°F. Keep at 40°F or colder and use within 3 days.
Reheat only what you need to 165°F, checking the center. The topping softens in storage; an uncovered finish in the oven may help dry its surface, but it will not return the beans to their original texture. This draft still needs human kitchen testing.
