Use a ripe banana
A banana with brown speckles is easier to blend than a firm green one. Weighing the peeled fruit helps keep the batter consistent because bananas vary considerably in size. An oversized banana adds moisture and can make the centers slower to set.
Rest before adjusting
Oats absorb liquid as they stand. Wait through the five-minute rest before deciding whether the batter needs more milk. Add only a tablespoon at a time. A thin batter can spread too far, making these tender pancakes difficult to flip.
Blend the dry oats first. Adding everything at once can leave larger oat pieces that take longer to hydrate. Stop the blender before scraping near the blades.

Control the skillet heat
Banana sugars brown readily, so a dark underside does not prove the middle is cooked. Medium-low heat and small portions give the inside more time. Turn a pancake only after the edges have started setting, supporting it with a broad spatula.
Do not taste raw batter: it contains uncooked egg. Check the center of a pancake from each batch and continue cooking if any wet batter remains.
Store and reheat
Refrigerate cooked pancakes in a shallow covered container within 2 hours, or 1 hour above 90°F. Keep at 40°F or colder and use within 3–4 days. Reheat leftovers to 165°F. Separate layers with parchment to make individual portions easier to remove.
Dietary substitutions
These pancakes contain egg and milk. Oats are sometimes processed alongside wheat; use certified gluten-free oats when necessary, and check every ingredient label. Different milk alternatives may change browning and thickness, so the original cooking estimate should not be treated as a tested result for every substitution.
